Hello! My name is Mai. I'm from Kyoto, Japan. These are some of the most popular recipes in Japan. They are healthy and easy to make. Most of them take 20 minutes or less to prepare. Itadakimasu! (Let's eat!)

Hi Vanessa,
Mirin is a rice wine like sake, but with a lot of sugar (40-50%) and lower alcohol. There's no substitute that I use, but it's easily found in Asian grocery stores or online.

Konnichiwa! I use a big frying pan and heat it up before adding the rice. Don't add too much rice, and use sake to stop the rice from clumping!

Hi! Im looking for the recipe for a sauce that my family and I get from a local Japanese restaurant called Sake Express. Its a shrimp sauce that is an orangish-pink color. Its simply called shrimp sauce at Sake Express but we love it and eat it on everything! Its a little sweet in taste, and I've tried a few recipes that I found on line, but they never come out quite right?

Oops, sorry I left that out, didn't I? Use two small bowls of steamed rice. (About two cups). I use an electric Japanese rice steamer to cook my rice!
