Hello! My name is Mai. I'm from Kyoto, Japan. These are some of my favorite Japanese recipes. They are healthy and easy to make—most of them take 20 minutes or less to prepare. Itadakimasu! (Let's eat!)

Hi Pam,
I'm so glad you like the site. You have a couple of options. You can try to boil the sake to remove the alcohol, or just omit the sake from the recipe. It's there to impart an extra little taste to the recipe, but it's not necessary. Please keep in mind that mirin, which is very common in these recipes, also has alcohol in it (it's rice wine). Thanks, and happy cooking!

Hi Mai,

I am so happy to have found your site. My husband is a retired Marine and we were stationed at Marine Corps Air Station, Iwakuni, Japan for 9 years. We loved every minute of it. We love Japanese except for fish. Our absolute favorite is gyoza.

Your site is wonderful and I will be preparing many of your recipes. My question is what can I substitute for the sake as we don't drink alcohol?

Thanks you so much for sharing your wonderful recipes with us.

Many blessings to you,
Pam Stevens

Ground daikon is called daikonoroshi. Usually we eat it with a little soy sauce. I'm not sure what kind of sauce that restaurant may have used (there are many varieties). However, daikonoroshi is very good in <a target="_blank" href="http://www.amazon.com/gp/product/B0002IZCYY?ie=UTF8&tag=japfooadd-20&linkCode=as2&camp=1789&creative=390957&creativeASIN=B0002IZCYY" rel="nofollow">soba sauce.</a><img src="http://www.assoc-amazon.com/e/ir?t=japfooadd-20&l=as2&o=1&a=B0002IZCYY" width="1" height="1" border="0" alt="" style="border:none !important; margin:0px !important;" />

I particularly enjoyed the side dishes of daikon that were served with so many things. Is the daikon just grated and served in a small bowl or are other ingredients added to it ? One soba restaurant had a large bowl of thick , cold daikon sauce (??) that you dipped the soba into. I'd love to know what was in that daikon mixture .

One of my favorites too! There are many okonomiyaki restaurants in Japan (I am from Kyoto) and this is one of the most popular types on the menu. You should make it for him, it's very easy!

If you have a toaster oven you can make the top crispy like an oven. A microwave won't do this, but you can probably still cook it that way.

Hello Mai!

Since I don't know how to use our oven, is it possible to use microwave instead of a real oven?

Thanks in advance.

Tanuki udon contains okara. Okara is the tanuki's favourite food, just as fried tofu pouches are the kitsune's. Okara is the "curd" left over from the traditional hand method of soy milk production.

mmm.. i love this egg.. i had ramen the other day, and was wondering how did they flavour the boiled egg.. cause usually in chinese cooking, the egg is really brown, but this nitamago is very light in colour, but tasty.
