Hello! My name is Mai. I'm from Kyoto, Japan. These are some of the most popular recipes in Japan. They are healthy and easy to make. Most of them take 20 minutes or less to prepare. Itadakimasu! (Let's eat!)

Hi Mai,
I noticed alot of your recipes contain mirin and sake, are these ingredients really essential or can I leave them out?
Thanks.

I've noticed that Japanese love cooking light... Not too bland and not too much of a flavor... I really appreciate Japanese cooking... I've been copying your recipes in my notepad... Thank you so much...

I really loved the cold soba so much... When I was abundant of packs of soba noodles, I'd eat 2 bundles at dinner! ♥

Right, the spices in this recipe, are they the same as the ready made soba sauce/soup that comes in cartons? ^.^

i belive that mom is going to kick me out of the house soon because i always mess up with her beloved kitchen while trying to make japeneese receipes which most of the times ends up with a complete catastrophy. I'm a bad chef :(

Hi Mai!
OMG. Gotcha!
Quite by accident, am so happy to have found your blog. Jap food is addicting I believe because of the freshness & good quality of ingredients being used and, 2ndly bec. of the sugar in most dishes, something that I've learned to put less of when I prepare them. Thanks for your excellent blog whose format is simple, orderly, user-friendly & offers substitutes for non-availability of ingredients. I had no problem w/ them though when I was a resident of Germany for a very long time bec. they were everywhere in Duesseldorf & now in Manila, they're much easily available. My problem is identifying them esp/ if no English text exists. In this case your blog is very helpful.

Are you a Japanese national?

Again, many thanks.
Am beginning to be an addict also of your blog.
