Hello! My name is Mai. I'm from Kyoto, Japan. These are some of the most popular recipes in Japan. They are healthy and easy to make. Most of them take 20 minutes or less to prepare. Itadakimasu! (Let's eat!)

love your recipes. though i haven't tried them yet but they seems easy and quick. especially because i'm a fan of japanese cuisines. but the thing is, i'm not a japanese, and i found out there's a lot of spices with japanese' name in your recipes. Like hon-dashi in this recipe, or mirin, and many others. I don't even sure where can i get those japanese stuffs in my country. So, is it okay if i substitues hon-dashi with other meat stock powder (like chicken)? and what is dashi (I found this a lot in other recipes)? is mirin some kind of japanese sugar?

sorry with my long questions and thanks :)

Fabulously quick and yummy, I'm always busy and running around, so I need to something quick and nourishing! I didn't use dashi, though, but used sencha tea instead, also, I added an Ume plum to the rice. Delish! Thanks!
